This week we’re mostly eating … Spinach!
Spinach is an excellent source of vitamins K and A, manganese, folate, magnesium, iron, copper, vitamin B2 and B6, vitamin E, calcium, potassium, and vitamin C. What a list!!
It is a very good source of dietary fibre, and one easy way to add it into your diet is to drop a handful (or a few frozen chunks) into smoothies. You won’t taste it, but you’ll be getting all of the fantastic benefits.
