This week we’re mostly eating … Black beans!
Black beans are little protein and fibre powerhouses. From a cup of black beans you get nearly 15 grams of fibre and 15 grams of protein, which is pretty much the equivalent protein found in 2 ounces of chicken! They’re also high in antioxidants, folic acid, magnesium and a good source of potassium and iron.
Black beans are a great quick accompaniment for pretty much any meal, and you don’t need to prep them from dry to be healthy (takes ages!), just grab a pack of beans in water, rinse, cook and eat!
